Shamrock Shake

Hi blogging family!

Yesterday, my friends and I had a blast celebrating St. Patrick’s Day. I made a shamrock shake to start the morning off on a festive note, then invited a few neighbors and a friend over for soda bread and a plant-based stew for dinner. It was hard to narrow down a movie to watch because they’re so many great Irish movies out there. We ended up watching Brooklyn with Saoirse Ronan and Banshees of Inisherin with Colin Farrell and Brendan Gleeson.

As far as eating healthy all day, that didn’t happen 🙂 We had a lot of sweets that evening that my neighbors brought over. I’ll get back on track tomorrow. Thankfully its another sunny day. I’m sure I’ll burn off lots of calories playing ball with my neighbor’s son like I promised. Well…I’m off to prep the veggies and fruit for platters that I’m making for a birthday party. Vegetarian Enchiladas

Hi blogging friends and family,

It feels like forever since I’ve blogged. Work and other things got in the way last month. I’m happy to report that my Mediterranean challenge of eating plant based meals and living a more mindful life has paid off. First of all, my sleep is so much better at night. I think this is because I walk everywhere unless its snowing or there is ice. My house plants have survived the low-light of winter. I love gardening outdoors but it’s been fun to watch my plants grow in the home. Archie, my little emotional support kitty, is such a joy to come home to and wake up to. Pets are the best! The B-12 and multivitamin supplements my doctor recommenced has given me more energy. And weight loss has been going as planned. I lost 7 lbs so far. Overall, I’d recommend the Mediterranean diet and lifestyle once you run it by your doctor. It’s super easy to follow and there’s so many benefits.

I’ve been coming up with some new recipes and got two-thumbs-up from a few of my friends for my super easy vegetarian enchiladas. I combined fresh tortillas, cilantro-lime rice, jalapenos, kidney beans, and a non-dairy Mexican cheese blend from Violife with red enchilada sauce to make a fresh and healthy weeknight meal.

Lemon Detox Drink

Happy Sunday blogging family,

For all of us in the US we got an extra hour of sleep. Wow, did I need it! I ended up watching classic scary movies that are filmed near the beach. Has anyone seen The Last Wave? It made me jump and I love scary mysteries. The Birds was almost comical but The Fog was perfect for a Halloween night at the Pacific Coast.

Well, after an evening of costume watching at the beach (everyone did a great job of social distancing), eating 2 large slices of pizza and devouring so many treats throughout movie night, I knew I’d have to redeem myself today with posting something healthy. The bright and cheery weather got me thinking.

Inspired by the sunny mornings in Capri, citrusy sent of lemons in Italy and a hint of pepper that gives it a kick, this lemon detox drink is just what you need to curb temptations during the holiday season.

Acai and PB Smoothie

Hi blogging family!

I hope this post finds you safely tucked at home with plenty of food and space to exercise. I’m grateful that my family is currently healthy. Keep in mind though, we’re only at the initial stages of the coronavirus outbreak in the Pacific Northwest.

For those that don’t know me, I have a background in international law and spent years in developing countries helping others. My passion is to write and cook. I dream of publishing my first novel. And news to all my followers, I landed my dream job in social justice with kind people that are really supportive. Then the coronavirus epidemic hit.

I feel so helpless but also know I am lucky that I can work from home. For now, we can still go outside and go on trails as long as we keep our “social distance.” I decided to start up my blog to uplift others that are not as fortunate. It will still be the same format but the food will come mainly from the pantry and freezer. I’m trying to be mindful about the grocery store and providing space and time for those that need it.
