Oatmeal Cranberry Cookies – Day 39 of Challenge


Good afternoon blogging friends and family,

I caved and baked cookies when I got home 🙂 So much for my diet today. I’m still learning how to navigate diet and exercise with having sweets every once and a while. The only solution I could come up with is to bake and give away most of what I make to my two neighbors with little ones.

By creating plant-base options for cookies, I found it eliminates a lot of the cholesterol that you may find in baked goods. I used Bob’s Red Mill Egg Replacer for this recipe and they still turned out chewy and delicious. You just have to be careful and not over bake them or else they get too crumbly and dry.

Now for a bit of tea, meditation, and reading a good book out on our rooftop garden (it’s finally sunny!). Tomorrow I plan on going hiking on my day off. Let’s hope the sun continues to shine.

Oatmeal Cranberry Cookies

Yield: 30 cookies     Prep Time: 20 minutes       Bake Time: 10 min per sheet of cookies

2 Tbsp Bob’s Red Mill Egg Replacer mixed well with 4 Tbsp water (let sit 1 min to thicken)
1 cup all purpose flour
1 1/2 cup old-fashion oats
1/2 tsp baking soda
1 tsp cinnamon
1/4 tsp coarse salt
1/2 cup non-dairy butter, softened (I used Miyoko’s European Churned Butter)
1/3 cup + 2 tbsp sugar
1/3 cup + 2 tbsp brown sugar
1 tsp vanilla extract
1/2 cup dried cranberries

1. Preheat oven to 350 degrees F.
2. Mix together the egg replacement powder with water and set aside. In a separate bowl mix flour, baking soda, cinnamon, and salt.
3. In a mixer, cream together butter and sugars until combined.
4. Beat in egg replacer and vanilla.
5. Mix in the dry ingredients until combined.
6. Add old-fashion oats and dried cranberries. Stir well with a wooden spoon.
7. Roll dough into balls and place them evenly spaced on non-stick cookie sheets or parchment paper.
8. Bake in preheated oven for approximately 10 minutes. Take them out when they are just starting to turn a golden color.
9. Let them sit on the cookie sheet for 2 minutes before placing them on a cooling rack. Enjoy warm from the oven!
