Heart Healthy Waffles

Not long ago (ok…maybe long ago…30 years to be exact) there were two little girls with braids in their hair, NKOTB night gowns on, rocking to “Hold On,” long before Bridesmaids was a hit movie. Often, our sleepovers ended with a yummy waffle breakfast.

Needing something uplifting after another week of sad news in the world, I whipped up my favorite cholesterol-free waffles recipe and blasted Willson Phillips while cooking. I don’t know if it was the sweet smell of waffles or listening to something nostalgic, I started my day off hopeful. So to my BFF out there, “hold on,” we’ll rock out to this song sooner than you think 🙂

Gluten Free Waffles


Yield: 3 servings       Prep Time: 10 minutes       Bake Time: 3-4 minutes each


Ingredients:

1 1/4 cup gluten free baking flour (I used Bob’s Red Mill)
2 tsp baking powder
3 tbsp bakers sugar
1 tbsp of vanilla powder (or 1 tsp. of vanilla extract)
Pinch of salt
1 1/4 cup of plain soy milk or milk of your choice
1 tbsp extra light tasting olive oil plus more if needed for the waffle maker
powdered sugar for dusting

Directions:
1. Preheat your waffle maker.

2. Stir dry ingredients in a large bowl. Add wet ingredients and whip with a whisk until batter forms.

3. Disperse batter on waffle maker according to directions.*

4. Enjoy with your favorite waffle topping.**

Tips:
* You might need to spray the waffle maker with oil before adding the batter.
** The recipe is not too sweet so you could also make savory waffles too!
