I don’t know about you but I’ve been searching for a gluten free waffle recipe that’s plant based too. After all, berry season is coming soon. I love this easy, heart-healthy recipe. And it’s freezable too!
Gluten Free Waffles
Yield: 3 servings Prep Time: 10 minutes Bake Time: 3-4 minutes each
Ingredients:
1 1/4 cup gluten free baking flour (I used Bob’s Red Mill)
2 tsp baking powder
4 tbsp bakers sugar
1 tbsp of vanilla powder (or 1 tsp. of vanilla extract)
Pinch of salt
1 1/4 cup of plain soy milk or milk of your choice
1 tbsp extra light tasting olive oil plus more if needed for the waffle maker
powdered sugar for dusting
Directions:
1. Preheat your waffle maker.
2. Stir dry ingredients in a large bowl. Add wet ingredients and whip with a whisk until batter forms.
3. Disperse batter on waffle maker according to directions.*
4. Enjoy with your favorite waffle topping.**
Tips:
* You might need to spray the waffle maker with oil before adding the batter.
** The recipe is not too sweet so you could also make savory waffles too!
