I found blood oranges at the market today. It’s the first time I tried them, and I realized they’d taste wonderful in a colorful citrus salad. The combination of citrus and fresh greens made such a simple and pretty springtime salad. It’s so easy to make; you could double the recipe and serve it at a party.
Citrus Salad
Yield: 6 servings Prep Time:10 minutes
Ingredients:
1 grapefruit
3 clementine oranges
2 blood oranges
Baby spinach
Fresh mint
Red onion
Dressing:
1 small shallot, finely chopped
1 freshly squeezed lemon
Zest of 1 lemon
Juice of ½ an orange
¼ cup Champagne vinegar
¾ cup extra virgin olive oil
Sea salt and freshly ground pepper
Directions:
1. Add all of the dressing ingredients in an airtight container or Mason jar. Shake to blend and set aside.*
2. Peel and slice citrus fruit. Slice red onion into thin circles. Layer the salad with baby spinach, citrus, red onion, and fresh mint leaves.
3. Drizzle the dressing over the salad and serve immediately. Enjoy!
Tip:
*The dressing can be made up to a week in advance.

I just discovered Cara Cara oranges recently, I don’t know if they are considered blood oranges, but they had quite pink/red flesh. Such delicious flavor. Now I just wish the real spring would show its face here so I could enjoy a spring-like salad like this!

Thank you. I agree. I was hesitant to try onions with oranges but somehow they worked. I’m perfecting a family recipe and will post it next Monday. I’ll be sure to link The Flowering Vine: More to the story as inspiration. 🙂

Thank you Tracey for the nomination. It means a lot to me. I finished your book, Can’t Hurry Love. What a fun read 🙂 Chapter 16 was a surprise…wasn’t expecting that. I’m thinking of doing a post in a few months of summer reads highlighting self published books. I’ll be sure to add yours to the list 🙂
