I found blood oranges at the market today. It’s the first time I tried them, and I realized they’d taste wonderful in a colorful citrus salad. The combination of citrus and fresh greens made such a simple and pretty springtime salad. It’s so easy to make; you could double the recipe and serve it at a party.
Yield: 6 servings Prep Time:10 minutes
3 clementine oranges
2 blood oranges
1 small shallot, finely chopped
1 freshly squeezed lemon
Zest of 1 lemon
Juice of ½ an orange
¼ cup Champagne vinegar
¾ cup extra virgin olive oil
Sea salt and freshly ground pepper
1. Add all of the dressing ingredients in an airtight container or Mason jar. Shake to blend and set aside.*
2. Peel and slice citrus fruit. Slice red onion into thin circles. Layer the salad with baby spinach, citrus, red onion, and fresh mint leaves.
3. Drizzle the dressing over the salad and serve immediately. Enjoy!
*The dressing can be made up to a week in advance.
