I feel like it’s that time of year when schedules overlap, flu season has arrived, the holidays are near…the list could go on forever.
I know it’s easy to fall into the cycle of not taking care of ourselves during stressful times. Breakfast is a perfect way to take a few minutes to relax, read something uplifting, and eat a meal that makes you feel good. For me, I’ve been reading Maya Angelou’s Letter to My Daughter while I sip on my favorite pumpkin smoothie. I find myself waking up early just to start the day.
Pumpkin Power Smoothie
Yield: 2 adult or 4 children smoothies Total time: 5 minutes
Ingredients:
½ cup canned pumpkin puree
1 ½ cups unsweetened soy or almond milk
2 scoops vanilla protein powder*
½ tsp. pumpkin pie spice
1 frozen banana cut into chunks
Optional Topping:
Vanilla coconut yogurt
Dash of ground cinnamon
Directions:
Blend until smooth.
Tips:
You can omit the protein powder and add 2 tablespoons of pure maple syrup for sweetness.
I used Hammer Nutrition Vanilla Vegan protein powder for this recipe.

I was going to skip the protein powder, hadn’t thought of oats. I will definitely have to try this.

Hi Manee. I found oats give a nice texture to smoothies. You might want to add a drizzle of pure maple syrup or preferred sweetener.
