Summer Sandwich

I can’t believe how fast summer has flown by! I like to keep meals easy during the summer, and one of my favorite recipes takes only ten minutes to make. Grilling or broiling the bread is essential. I added hemp hearts to boost vitamins and protein. If you don’t have them on hand, sesame seeds or poppy seeds would be delicious too.

 Summer Sandwich


Yield: 3 servings         Prep Time: 10 minutes


Ingredients:

6 slices of artisan bread (I used sourdough roasted garlic bread)
Olive oil for grilling
1 cup ricotta cheese (or almond ricotta )
1 tbsp. lemon zest
1 avocado
12 cherry tomatoes
2 tbsp. thinly sliced red onion
¼ cup baby arugula or basil leaves
3 tbsp. hulled hemp hearts or sesame seeds
sea salt and black pepper to taste

Directions:

  1. Heat up the grill. Lightly add olive oil to the bread slices with a pastry brush (both sides). Grill the slices of bread until toasted. Flip and grill again. Arrange the bread on a platter.
  2. Stir the ricotta cheese with lemon zest. Spoon evenly over the bread slices.
  3. Add the remaining veggies.
  4. Sprinkle sandwiches with hulled hemp hearts or sesame seeds. Add salt and pepper to taste and enjoy!
