A Boost of Vitamin C

Well, it looks like I got my wish. We’re experiencing a bit of a heat wave here. Summer is officially on. My run turned into a walk this morning to look at all the wildflowers sprouting. I even noticed a few blackberries.

During the summer, I like to drink citrus carrot juice after a run. It gives me a boost of energy and promotes healthy skin. I also read that vitamin C aids in the absorption of iron. If you don’t have a juicer, all you need is a blender and a fine-mesh sieve. 

Citrus Carrot Juice


Yield: 4 servings        Prep Time: 5 minutes


Ingredients:
4 grapefruits, peeled and sliced
4 oranges, peeled and sliced
6 carrots, thoroughly washed and tops removed
1-inch piece of ginger, peeled

Directions:
1. Grate the ginger, and combine the ingredients in a high-speed blender. Add a 1/2 cup of water and blend until smooth.
2. Place a fine-mesh sieve over a wide-mouth mason jar or bowl. Slowly pour the blended juice over the sieve. Use the back of a spoon to push through any remaining juice. Compost or discard the pulp and enjoy!

    In my country, we make something a bit similar: We grate carrots and add to it orange juice, some sugar & a bit of orange flower water! We serve it as a dessert. This reminds me of it. Beautiful 🙂
